Sweet truffles
- 100 g dry rusks
- 100 ml apricot juice
- 30 g apricot jam
- 150 g Optimus Mascarpone
- 40 g cocoa powder
Garnish
- 40 g cocoa powder
Method
Crush the rusks into fine crumbs.
Add the mascarpone, apricot jam, apricot juice, and cocoa powder. Then mix everything together.
Once the mixture is ready and firm, , shape it into small truffle balls.
Tip
Let them rest for a few hours before serving.
Serving
Roll the truffles in unsweetened cocoa powder.
