Pistachio Tiramisù

Ingredients for 12 servings

  • 250 g savoiardi (ladyfingers)
  • 500 g Optimus Mascarpone
  • 3 eggs
  • 200 g pistachio cream
  • 160 g sugar
  • 4 cups of coffee
  • 1/2 glass of water

For garnish

  • Chopped pistachios, to taste

Method

Beat the egg yolks with half of the sugar.
In a saucepan, dissolve the remaining sugar with half a glass of water and heat to approximately 80°C.
Pasteurize the eggs by gradually pouring the syrup into the yolk mixture while whisking continuously with a hand mixer.

Add the pistachio cream to the mixture, followed by the mascarpone, and mix until smooth.

Assembly

Soak the ladyfingers in coffee and alternate layers with the mascarpone cream.
Finally, garnish with chopped pistachios.
